Doom for the Dreamcast is a port based on older Doom code. In that sense, it's more like Chocolate Doom.

With that being said there is software out there that supports dedicated servers or multiplayer lobbies. Doome Wire being one of these: http://russell.mancubus.net/doomwire/

There are others that are made too and it would be cool to use like a masterlist so people don't have to just connect to each others ip's all the time. Also it supports crossplay like between psp and pc and whatever uses old doom code so it the possibliites are endless when it comes to add ons.

The Dreamcast version would have to run Chocolate Doom. The current version for the Dreamcast is a straight port designed to run the original Doom games as is.
